Watermelon & halloumi salad recipe
In the summer, we all seek something refreshing and light to have on our lunch break in the office or with a glass of wine outside in the sunshine. There is an endless amount of light and tasty salad recipes; however I have my very favourite one that I would like to share with you. It’s a summer watermelon salad. No doubt, watermelon is a very popular fruit in the summer. You can literally add it everywhere. My way is to add it to my salad. Sweet, light and juicy, it’s simply the perfect ingredient!
- 500g seedless watermelon, cut in pieces
- 180g cut halloumi
- 1 ½ cups cooked white quinoa
- 50g washed baby spinach leaves
- 50g pine nuts, toasted
- ½ cup each parsley and mint leaves
- 3 tbsps olive oil
- Zest and juice of one lemon
- Sea salt and freshly ground black pepper
Fry Halloumi on a medium heat for 1-2 minutes on each side or until golden. Let it cool for a few minutes.
Now it’s time to mix up all the ingredients. Add in a bowl the cooked quinoa, watermelon batons, spinach, pine nuts, olive oil, herbs, lemon zest and juice.
Serve on a platter with cooked Halloumi. Bon appétit!
