Season for raspberries- the perfect Eton mess recipe
You may be wondering what are we in the season for today? The answer to that question is raspberries.
Therefore, what better way to celebrate seasonal produce available at the moment than to make a delicious raspberry Eton mess with our chef’s recipe below:
You will need:
1 punnet of raspberries
2 tbsp raspberry jam
300ml whipping cream
1tsp vanilla extract
1 heaped tsp icing sugar
4 meringue nests, roughly crushed
Just whip the cream and fold in the jam, vanilla extract, icing sugar and crushed meringue. Add in the raspberries and gently stir. Then serve in glass jam jars topped with a couple of whole raspberries and garnish with some fresh mint and enjoy!
