15 Minute Lunch Recipe

Life can be hectic sometimes, and we don’t always have enough time in the morning to prepare our lunch for the day.

For those days when you’ve nearly run out of time, how about a healthy chopped chicken salad, which is easy to prepare in only 15 minutes?

Kudos’ Honey & Mustard Chicken Salad

Ingredients

Cooked chicken breasts 150g

Romaine lettuce 300g

Cucumber 150g

Cherry tomatoes 200g

Avocado, 1, pitted and cubed

 

For the dressing:

Wholegrain mustard 2 tsp

Honey 2 tsp

Juice of one lemon

Extra virgin olive oil 6 tbsp

 

Method

Whisk together the ingredients for the dressing. Put the remaining ingredients in a bowl, and drizzle over the dressing.
